Woah at the Recap

TGIF!!  The past two days have been a MESS! Mess, I tell ya!  I just had stress and high priority tasks coming at me from all angles. BUMMER!  Diet and training were 110% on point, though. ;)

I totally missed out on the blogging action yesterday… So, let me recap Wednesday and Thursday… here goes! :)

Wednesday

I mentioned my first couple of meals in a previous post… well, I also enjoyed a ton of stir-fry veggies. YUM!  I love cooking bags and bags of various veggies to nosh on throughout the week.

I had some of the stir-fry several times for lunch during the week, Wednesday included.

Why are my cell phone pics so fug?!

Wednesdays are my days off from the gym.  Work is just way stressful every Wednesday. This one was no exception. This one may have been the mother of them all!!

I came home and isolated myself. :D Seth hates it when I do that! I’d rather do that than be pissy, though. Sometimes I just need some time to myself to unwind.

After unwinding, Big Seth fired up the grill, while I scorched some frozen peppers and onions.  I like’em that way! What can I say? I’m sure it’s not the healthiest method, but whatevs. :D

My steak was enjoyed atop a salad, drizzled in a slightly sweet balsamic vinagrette. I threw some sauteed mushrooms on there for good measure. ;)   To make the meal even better, we took it outside. *sigh* Love it back there!

After my food settled and after mucho procrastinating, I finally hit up the treadmill for my cardio du jour.  BLAH!  I had a hefty reward waiting for me, though.

PROTEIN ICE CREAM!!!!  Okay, it’s just a protein shake with a crap-ton of ice, stuck in the freezer for a few mins. I tell myself it’s ice cream, then drizzle melted coconut oil on top… it hardens, and when I bite into it I like to pretend the coconut oil is chocolate.  That’s not normal? ;)

plus cocoa powder, and LOTS of ice…

blended until smooth… then popped in the freezer for… maybe 5-15 minutes? I’m not patient enough to wait longer than that. ;)

Then, ya nuke your jar of coconut oil (10 seconds will do!), and drizzle a spoonful on top! (and if you are like me, you weigh it! ;) )

Sit back, relax, watch that coconut oil harden into a chocolate-like texture… take a bite, and enjoy.  SPLENDID!

I have made it with many different protein powders, milks, etc, but this is my current flava. :D I normally do not buy this particular almond milk because it isn’t as diet-friendly for me at the moment. I prefer the original over the (sweetened) vanilla for calorie-saving purposes. I sent the hubs to the store for almond milk… this is what he came back with. That’s what I get for not being specific. ;)

THURSDAY

Rise and shine, it’s cardio time!! Me and my bottle of water (and my jug cup of coffee) hit the gym for some elliptical and recumbent bike lovin’.

Being the delinquent food blogger that I am, I only took one pic of my eats throughout the day.  Bad day numero dos. At least nothing too major happened. I’m healthy, my family is healthy, my cats are healthy (hahaha)… I had a green monster for breakfast (protein powder, almond milk, two scoops of Amazing Grass SuperFood), lots of veggies, quinoa, chicken, salmon pouches… same ol’ same ol’.

After work, we hit the gym to annihilate legs.  I beat Seth on stiff leg deadlifts. :D   GO ME!

When we got home, the camera came out to play!! YAY!  I had this awesome idea for chicken paninis, macros planned out for every single stinkin’ ingredient, and EVERYTHING.  Well, little did I know that Seth ate the last of the chicken. Ugh!

So, I plopped a pack of tuna in a bowl, mixed it with some Southwest mustard, carefully placed it between two halves of an Ezekiel bread slice, hosed her down with butter spray, and threw that baby on the Foreman.  Seth got the real deal Holyfield.  Tuna salad with olive oil mayo, Southwest mustard, various cheeses, real butter… *dies* I wanted to eat his instead of mine! ;)   Thankfully my sandwich turned out DELISH!! This flop turned into a glorious occasion! (I get excited easily, huh?) I now have an easy and different menu item.  Seth said his sandwich was the best ever.  I may never know.

I enjoyed mine with a salad, of course. I’m a bit redundant. :D

While munching on my yummies, I roasted veggies for the next day.

Here’s how it went down.

1) Set oven to broil on HI.

2) Spray pan with butter flavored Pam

3) Toss veggies in pan (I used frozen)

4) Spray veggies with butter flavored Pam (I am addicted)

5) Top with sea salt an freshly cracked black pepper (or spices of your choosing)

Brussels Sprouts!

All that is in the oven cooking while I sit down to enjoy dinner with my hubby.  I don’t time it. I just cook. When I’m done, it’s done. ;)

And you can see my tuna sandwich pic above to see just how extra-tasty-crispy I like my sprouts.  There are three on my salad. Totally CHARRRRRRED (said in pirate’s voice).

BUT, my nightcap stole the show. A FREAKING CANDY BAR! Yep, I said it. Even SHOUTED it. It deserves it.  I didn’t actually think it would work, but I mixed melted coconut oil, cocoa powder, and protein powder until it was somewhat smooth (there were a couple lumps, but heck, I didn’t think the idea would work), plopped it on a plastic wrap covered tray, then set it in the freezer to harden… maybe five minutes. It tasted like chocolatey heaven. I will make it again, SOON, and once I perfect the recipe (with exact measurements), I’ll be sure to post up.  But for now, here’s a teaser pic!

PHEW! Woah at the recap! There were a lot more pics than I expected.  I’ll fill ya in on today tonight. ;) I need to find a convenient bloggy schedule. Schedule.  Yeah… uhm…

Orange ya glad it’s Friday?

TGIF Bloggerfam!!
I had to quickly snap a pic of the food I packed this morning. It made me giggle — everything was… ORANGE! I apologize for the poor pic quality. My digital camera was dead, and I made due with my crappy camera phone.

I must say, I have totally fallen off the wagon. Last week I went to the gym one time. I was battling the stomach flu most of the week! Then KY Muscle rolled around, so I didn’t work out.
This week, I went to the gym hoarse on Monday, thinking it was just the traveling, but it really was an awful cough/cold. I’m still on the mend.
I am making tomorrow my FRESH START! I know, kinda crazy with Turkey Day around the corner, but I need my mojo back, and gosh darnit, I want it back sooner than later. Even if I am still sick tomorrow, I must do something active. MUST!
I’m also thinking some kind of challenge between Thanksgiving and Christmas would be fun, right? Kick start to the New Year? I don’t know… just tossing out ideas (and trying to avoid work).
Have a fabulous weekend!! I’ve been a poop head all day, but I’m going to have FUN after work. Greek pizza and Guinness at one of my favorite joints! WOO HOO!
